1 cup whole wheat pastry flour
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
3/4 cup brown sugar
2 large eggs
5 tablespoons canola oil
1 tablespoon walnut oil
1/4 cup walnuts, toasted
1 Granny Smith apple, unpeeled, diced into 1/4-inch pieces
Preheat oven to 375F. Prepare muffin tin by oiling each cup with canola oil or a cooking spray.
In a small bowl, combine flours, baking soda, salt, and cinnamon.
In a large bowl, whisk together the brown sugar, eggs, and oils. Chop the walnuts. Combine the chopped walnuts and vanilla with the wet mixture. Add the flour mixture and stir until just combined. Gently fold in the diced apples.
Spoon the batter into prepared muffin tin and bake for 15 minutes or until toothpick inserted in the middle of muffin comes out clean.
Let cool in the pan for 10 minutes and serve.
Makes 12 muffins.
